Soup doesn’t just keep us warm. It comforts, fills the house with the best cozy aromas of the season, and makes it easy to eat more vegetables without even trying. Every one of these healthy soup recipes is built on whole-food ingredients like lentils, beans, potatoes, broccoli, and carrots, so the bowls are filling, satisfying, and full of plant-based protein and fiber (the red lentil soup has 21g protein + 25g fiber, and the split pea soup has 14g protein + 16g fiber).

Start the slow cooker minestrone in the morning and dinner is ready by evening, because the longer a soup simmers, the more flavorful it gets. Save your veggie scraps to make my Homemade Vegetable Stock— the flavor is unreal (and it’s free!). As fall settles in, this lineup is perfect for chilly evenings, meal prep Sundays, or anytime you want something hearty and wholesome.

Fewer dishes, more flavor. These healthy soups simmer in a single pot, Instant Pot, or slow cooker, so cleanup stays super easy. Choose a 15-minute ramen for a fast weeknight, a set-it-and-forget-it minestrone for a busy day, or a big pot of split pea or black bean soup to stock the fridge for the week.

Soup Toppings

Sometimes you find a soup recipe in need of a bit of oomph. I get it (I put hot sauce on a lot of dishes).

  • Fresh herbs: finely minced herbs can add a delightful flavor explosion to any soup. Try minced scallions, basil, tarragon, basil and dill.
  • Cashew Cream: A good vegan sour cream can provide depth and creaminess to almost any recipe. If you’d add sour cream to a soup, then you can add this!
  • Sun-Dried Tomato Pesto: There’s just something about pesto that instantly levels up a recipe. I love adding a dollop of vegan pesto to a good vegetable soup. It’s just so good! I’ve got a few different variations you can try, and they all freeze well.
  • Vegan Parmesan Cheese: Parmesan is a staple in many American households. This vegan cheese sprinkle certainly gives Kraft’s a run for its money, and its made with real ingredients that really do add a cheesy finish to your dish.

The 10-Day Soup Challenge was so much fun as I love soup. I loved all of the recipes except I’m allergic to coconut and couldn’t do that one. My absolute favorite is the Black Bean Soup. The ingredients were basic and easy to find, and the actual putting together of the soup was quick, and the taste was delicious. I’m all for recipes that have easy to find ingredients and that do not take a long time to prepare and cook. I still have a little bit of Black Bean soup leftover so I’m having it for dinner with a large salad and baked tortilla chips.

Love soup and I appreciate eating a healthy prepared soup can be quite satisfying, especially when accompanied by a salad. This broadened my palate.
    Will definitely make these again.
Was able to use the Thai Curry as a sauce for other dishes.
Thanks for inviting me to join.

My favorite soup from the challenge was the Vegan Tomato Soup. So good with a toasted vegan cheese sandwich. Thank you so much for this 10 day challenge. I learned how easy it is to make a really healthy pot of goodness from scratch. Definitely will use these recipes again!

  4. First of all I would like to thank everyone for putting together this challenge. I know how hard and time consuming it is to put an event together! Great job!
While all the recipes were packed with healthy and fresh ingredients and all brought a different twist and taste to the table my favorite was the tomato. I started making homemade tomato soup one day when I didn’t have any Campbell’s on the shelf. So it was nice to try someone else’s. And it was so yummy and packed with so much flavor. My runner up to the tomato was the Thai Coconut. While I am not a fan of coconut or curry this one was hard for me to get excited about. But I loved it!! While all the soups and this challenge was something to look forward to each and every day, the best part was the day my daughter called and ask me if I wanted to join with her. She lives on her own now so we don’t get a chance to cook together much so it was nice talking and comparing notes while cooking and sending pics of our soups. We even had a girl’s weekend getaway and brought all the ingredients with us and made them together. So in closing this challenge not only provided me with some healthy and new soup ideas it gave me lasting memories of enjoying my time with me daughter.
    Thank you again

    1. Making memories with your daughter over soup has us getting all the good feels Michele! We’re so glad it gave you that time together. xoxo
