  1. I’m finding my groove. My boyfriend is a meat and potato (or 3 carb a meal) kind of guy. He made pork chips, Mac and cheese, mashed potatoes and garlic bread for dinner. I enjoy fruits and veggies but it is hard to eat separate meals from others in the house. He has no interest I’m eating more plants, except beans.

    1. Hi Rosanna! It can be difficult when our partners are a little more apprehensive. Maybe compromise starting with 1 plant-based meal a week then maybe going from there?

  2. I’m 90% vegan, I eat junk food and crave potato chips and sweets. The 10% that stops me from being 100% vegan is occasionally I consume raw honey. I like the concept of plant base eating at this point in my life, I’m 73. I’d like to adhere to a healthier diet to lose weight and alleviate my high blood pressure and pre-diabetes.

  3. I’m tired of being tired. I want some energy back. I’m only 78 and should be doing a lot better for myself. I find it incredibly hard to do the plant-based thing for a single person household. The quantities sold at the grocery store make it difficult to get variety without waste. There has to be a better way.

    1. Hi MavMarsha! We all get tired of being tired at a certain point. It can be really hard to cook for just one, but I recommend lining up recipes that include the same ingredients so none go to waste!

  4. I’m a 26 yo female who is skinny on the outside, but told by my doctors (and blood tests) that I’m fat on the inside. Was diagnosed as pre diabetic 3 years ago, and despite integrating various exercises into my routine, I could never stick to healthy food habits. This year, I’m here to change that. I’ve been working out/cardio/gym more consistently than ever before and I hope that pairing this with a healthy diet will help me see those lower blood sugar results that I dream of. Any recipes with more veggies, low refined carbs or sugar, and low bad fats are what I’m here for! Cheers to everyone here working on improving their bodies and health!

  5. I know how well I feel, look, and how much more energy I have when following healthy eating. I struggle to get back to it fully. I’m looking for excitement and motivation to carry me back to where I’ve been before— vegan, fit, relaxed, and happy! I love almost every recipe and smoothie I’ve tried from Jen

  6. Good eating habits are essential to living a long, healthy, and happy life. It’s a lifestyle that is important to me and those around me. What I eat reflects how I feel, act, and think. I am not perfect- and love things that I know dont make me feel good afterwards. Therefore, I am always wanting to stay motivated, inspired and learn different ways to make simple, healthy, and flavorful meals that become a staple. I absolutely crave greens- juices, salads, raw, cooked… but I’d love to have 10 minute or less solutions that are simple to make/ grab. Ease is what helps stay on track… along with the right mindset and the commitment to always better your health.

    1. Hi Maria! Good eating habits are absolutely essential to a long healthy life! Craving greens is such a great thing because ultimately your body knows what it needs!

    1. Hoping to achieve more of a comfort level with plant based food preparations. Hoping to change my long standing aversion to prepping healthy meals for myself.
    Why: I would like a healthy body and mind.
    2. Emotional impact: Less body image stress… less fear of unhealthy food induced physical ailments.
    Physical impact: Possible weight loss… less “weight” = less weight. Less chance, or reversal of, physical ailments. And more energy to enjoy this earthly experience and all that comes with it.
    3.Who else benefits? Parents, brother, doggies, friends, coworkers, neighbors, strangers 😉

  8. I’m hoping to change the way I think about food and eating. I believe it would help me achieve my goal. Emotionally, I hope it will help me feel better about being in control; physically, I would look better. I feel my family would benefit as well.

    1. Hi Vee! Our mindsets about food and eating are often the hardest part of getting it all under control. I’ve noticed my family benefits from my choices as I’m the one doing the cooking!

  9. After exposure to Agent Orange as a Marine in Vietnam, I developed Non-Hodgkins Lymphoma. My medicine is the food I eat and exercise. I will incorporate a plant based diet in hopes of feeling better, living longer, and looking better.

  10. Im hoping for improved health. Less risk of stroke, heart disease, type 2 diabetes.
    I would like to increase my life expectancy. I need to be around for my family. I want to see my grandchildren have children.
    My significant other will also benefit health wise. I’m cooking better food for him too. also, He is paraplegic and relies on me for daily care. I need to strong and healthy to continue doing that.

    1. Hi Denise! Improving your overall health is a great place to start! We all have someone relying on us, some more than others, but improving our health for them can help us on the track to taking care of our loved ones!

  11. I was diagnosed with a chronic kidney condition called FSGS and along with watching my sodium my doctor recommended a majority of protein in my diet be plant based. I’m not much of a meat eater anyway because I don’t like to prepare it but my diet definitely had a lot of cheese and my sweet tooth is out of control. I am an all or nothing person if I eat cheese it’s a lot and often and the same with sweets so I am struggling with consistency. I would also like to loose weight. I try not to make it the main focus but years of steroids have impacted by weight and my blood sugar has been testing high and I worry about type 2 diabetes.

I am 70 years old and have been widowed for a little over a year. 2021, my husband spent most of the year in the hospital and hospice, and my diet degenerated almost totally into fast food/pre-fab food. Last year was not any better: my DIL, who had been fighting breast cancer for 3 years, succumbed in June, leaving my son with 3 small children. During the summer, another son got divorced. And in December, my daughter had a daughter, her second child, who came down with RSV and ended up in the hospital for week right after Christmas through New Year’s. So my bad diet continued through last year.

    My family and I are all hoping for a more tranquil year this year, and so far we are having one. But I feel that I desperately need to clean up my diet and get back to home-cooking, and I am looking to this master class for inspiration and help. Thanks for providing such a wonderful resource!

  13. Hello Jen! I’m happy to have found you. I’m a CCRN (cardiothoracic ICU), and have been predominantly vegetarian since losing my fiancé to cancer several years ago. I do consume fish and eggs occasionally, but I’m finding it difficult to get the amount of protein I require daily to build muscle with my resistance training program. My trainer has me aiming for 25-30 gms. per meal with a couple of 20 gm. snacks per day, which is working well with the help of a plant-based protein powder. But, I want to move away from some of the “prepared” vegetarian products I’ve been relying on (often too much sodium), and learn how to prepare more grains/salads, roasted veggies, etc., to achieve this as I find I’m getting bored. I just acquired my first Vitamix blender in the hopes of getting more nutrition packed into my protein shakes (&meals in general) with less time spent in the kitchen, as I have to wear all the hats. Thanks, in advance, for all you efforts in putting this program together.

  15. In June 2021 I went through the Ornish Program for people like me that have Heart Disease. Since then I have lost 105 lbs and I am on a 100%
    Plant based diet and what a huge difference it has made in my life.
    I took your class because I am always open to learn new things that will continue to help me and keep me on my new plant based way of eating.

  16. I want to give my body the best chance at healing multipe chronic illnesses. I know I can heal with a plant-based diet. It’s just hard for me because I lived a low-carb lifestyle for the better part of 15 years!! But now I have liver disease. I’ve tried this WOE before with your Fresh Start Plant-Based Cleanse and I loved it! What I really need is a lot of ideas for yummy, crave-worthy and satisfying meals!
