  • Sweet potato: Cooked sweet potato is what makes this smoothie so creamy and satisfying. Baking it in the skin keeps all the good stuff locked in. How to Make Sweet Potato Smoothie

My sweet potato smoothie takes five minutes or less to blend. This one does have a bit of prep as you need a tender potato. Here’s how I make it:

  1. Bake the sweet potato in an oven at 400°F for 45 minutes or microwave it for five minutes until fork-tender, to start. No matter how you heat it up, make sure to poke holes through the skin to ensure nothing explodes while baking. You want a cooked sweet potato for this recipe.
  2. Blend the spinach and almond milk until there are no leafy chunks left.
  3. Add the remaining ingredients and blend again until smooth. You choose whether to peel your cooked potato or keep the skin on during blending… I’ve had it both ways!
  4. Pour into your favorite glass and enjoy!

Ingredients 

  • 1 cup sweet potato diced + cooked
  • 1 cup spinach
  • 1 cup almond milk unsweetened
  • 2 tablespoon water
  • ½ cup mango frozen
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg ground
  • ½ teaspoon vanilla bean powder or vanilla extract

Instructions 

  • Cook sweet potato before blending. See notes (or buy it pre-cooked).
  • Blend spinach, almond milk and water until smooth.
  • Next add remaining ingredients and blend again.

Just bake at 400°F for 45 minutes or until fork tender. Or microwave for five minutes. Just make sure to poke holes in the potatoes so they don’t explode while baking.

    This one was very thick but creamy. With the sweet potato it was a nice mix up to my normal green smoothie routine and will mix it in if I ever have leftover sweet potato on hand

    I thought I wasn’t going to like this one, as it was so thick. But I added ice (made the sweet potato last minute) to help cool it down and it thinned it out enough for me to actually love it! Who doesn’t love cinnamon and nutmeg? I made a double batch to share with my friend that was there helping me prep. She is really picky so I didn’t expect her to like it, but I heard her slurping up the last remnants through the straw. This one was a hit!

    Ohh, this is delicious and will definitely make again. I used fresh nutmeg I ground myself which elevated the coziness. I normally don’t like milk-based smoothies, but the spinach and sweet potato (and probably my vitamix) made it creamy in a tasty way. I blended each half of the ingredients for 30 seconds and the consistency is thick but still drinkable with a straw. I bought frozen cubed sweet potatoes (which I steamed in the bag) then used 4 oz (my best guess of half a sweet potato). Between the sweet potato and frozen mangoes, this recipe doesn’t need any extra sugar. Also, since this smoothie is more on the savory side for me, my only addition was half a scoop of unflavored whey protein powder to enjoy this as my dinner tonight. Welcome to fall everyone!
