By the time I graduated college, I had 3 solid recipes under my belt: cheese quesadillas, black bean burritos & pancakes. Beyond that, I relied on the Trader Joe’s pre-made food section and a lot of Taco Bell. Mexican food is my love language, if you can’t tell. 😉
I grew up to home-cooked meals almost every night, thanks to my mom.
Yet once I was on my own, I struggled to justify spending time in the kitchen. There was so much else I wanted to do! I’ve always juggled multiple jobs, multiple classes, multiple kids, training for marathons, traveling, coffee dates and geo-caching. This was who I was!
To me, cooking took time away from the people and the things I loved the most. It wasn’t until I hit 30 that I saw a different side to this coin.
Cooking with healthy meal plans became the best way to nourish my body. It gave me the energy and healthy body to spend time with those I love… doing the things I love. Ya with me?
The Truth about 30 (ya ready?)
Turning 30 was a very cool milestone in my life. I was running my own company, had two incredibly fun kids and married to the most amazing man (seriously, I have a catch!).
Turning 30 was also a wake up call on my youthfulness… or lack thereof.
I began to see the wrinkles, the tummy softened, my energy levels dropped and a few gray hairs sprouted. I realized that Taco Bell wasn’t as forgiving on my figure as it used to be. And running a few times a week couldn’t hide it anymore.
I wasn’t certain what 40 would be like. But if I kept going at this rate I knew it won’t be a very exciting time. I got serious about the foods I was putting in my body and discovered how to incorporate healthy meal plans into my busy schedule and not feel burdened by any of it.
Through all this, I’ve discovered a way to make meal planning work for me and my crazy busy life. You’ll easily do this too because every recipe you add to your meal plan will be one of your favorites!

When it comes to planning healthy-ish meals for the week, you’ve gotta leave space for Chipotle, Starbucks and pizza night. Yep, I just said it— healthy meal plans don’t mean saying adios to our family meal hacks! If we want to stay sane and succeed with this, we gotta have some hacks in our back pocket for crazy nights! Yet the other half of the week we can enjoy nutritious home cooked meals that help us age effortlessly.
